Sloppy Joes Neutral

Saute in 1 teaspoon canola oil until vegetables are soft, about 10 minutes:

2 cups chopped onion
2 cloves minced garlic, 4 roasted
1 carrot, chopped
2 stalks celery, chopped
1 jar roasted red pepper, chopped, add juice also
2 tablespoons fresh parsley, chopped - 1 tablespoon dried
1/4 teaspoon ground cloves
1 teaspoon ground cinnamon
2 teaspoons dried oregano, or Italian Seasoning
2 teaspoons dried marjoram

Add:

1 tablespoon balsamic vinegar
1/2 teaspoon salt
1/2 pound diced ground soy meat substitute or roughly chopped beans (beans will change this to a Starch)

Saute until "meat" is browned, about 7-10 minutes. Remove from heat. Stir in:

3-4 tablespoons Dried Tomato Paste

Cover and let sit 15-30 minutes.

Serve over your choice of:

Before adding Sloppy Joe mix top bread with:

lettuce
tomato slices
Soymage American or Cheddar slice if used beans
Veggie Slices if didn't use beans

Leftovers: (if you didn't use beans) reheat and use as an omelette filling, (topped with cheddar flavored Veggie Slices or cheddar cheese).

Whole Wheat "Buttermilk" Bread

Mix :

2 cups soy milk
2 tablespoons fresh lemon juice

Let sit while mixing in a large bowl:

2 cups whole wheat flour
1 cup soy flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon sea salt

Add the soy milk. Stir and pour into a greased loaf pan. Let stand 20 minutes. Bake 1 hour at 350 degrees.

Leftover slices can be toasted and topped with:

Celery Salad

Cut into matchsticks or just dice them:

8 celery stalks(or jicima)
2 small tomatoes(or 1 cucumber)

Puree:

4 tablespoons firm tofu or soy mayo
2 tablespoons Dijon mustard
2 teaspoons balsamic or rice vinegar
1/2 teaspoon date or maple sugar
2 teaspoons fresh tarragon, or 1 teaspoon dried
salt & pepper to taste

Pour over celery and tomatoes. Toss the salad and serve it garnished with celery leaves.

Spicy Sweet Potato "Frys"

Preheat oven to 400 degrees. Wash and scrub 2 sweet potatoes, leaving the skins on. Cut into sticks 1/4 to 1/2-inch thick by 2 to 4-inches long and set aside.

In a large bowl or ziplock bag, stir together:

Add potato sticks to bowl/bag and stir/toss to coat. Arrange sticks on a baking sheet and bake for 30 to 40 minutes, or until potato is tender on the inside and slightly golden on the outside. Halfway through cooking, stir with spatula to prevent potato from sticking.

Leftover oven-fried potatoes tend to be soggy, but they can be chopped and added to a mixture of fried onions and potatoes, added to a potato salad, served inside a pita and topped with coleslaw ...
