Omelettes

Omelettes are great for brunch or supper, but not for breakfast! Just because the UnDiet encourages you to eat Fruit only for breakfast is no reason to go without great breakfast foods, just serve them at another time of day.

Pizza Omelette

Saute a mix of 6 cups of veggies until tender crisp. You may substitute shredded chicken or turkey, crumbled sausage, sliced pepperoni, or shrimp for 1 cup of the vegetables.

Whip 12 egg whites or 3 cups Egg Beaters and 1/4 teaspoon each of sea salt and turmeric together. You may also add 1/4 teaspoon dried oregano if you wish. Lightly spray second saute pan with vegetable oil and pour in egg mixture.

Cook over medium heat until egg sets. Place omelette in a baking dish or cake pan roughly the diameter of the omelette. If the dish is non-stick eliminate spraying lightly with vegetable oil. Spoon vegetable mixture on top of omelette. Heat 1 cup tomato puree and pour over contents of baking dish. Top with shredded  or diced mozzarella cheese or Veggie Slices. Place under broiler until cheese melts and browns slightly. Cut into four wedges and serve.
